A classic Italian dessert made with layers of coffee-soaked savoiardi biscuits and a rich mascarpone cream.

2 1/2 ml vanilla extract

250 g mascarpone

3 dl espresso

4 1/2 cl coffee liqueur

200 g savoiardi biscuits

cocoa powder

Preparation: Make sure you have all ingredients ready before you start cooking.

Whip the egg yolks and sugar on medium-high speed for about 10 minutes until pale, thick, and creamy.

Add the vanilla extract and mascarpone. Beat just until smooth and combined. Transfer the mixture to a bowl and set aside.

Beat the egg whites on high speed until stiff peaks form, about 3 minutes.

Add half of the mascarpone mixture to the whipped egg whites and gently fold it in. Once mostly incorporated, add the remaining mixture and fold carefully until just combined.

Stir together the espresso and coffee liqueur. Quickly dip each savoiardi biscuit into the coffee mixture, then arrange in a single layer in an 8-inch square dish.

45 ml coffee liqueur

200 g savoiardi biscuits

Spread half of the cream mixture over the biscuits. Add another layer of dipped biscuits, then top with the remaining cream.

Cover and refrigerate for at least 3-4 hours or preferably overnight.

Dust with cocoa powder just before serving.
