Preparation: Make sure you have all ingredients ready before you start cooking.

Cook pasta in well-salted water until al dente.

Reserve at least 1 cup pasta water before draining.

Heat olive oil over medium heat.

Pan-sear in olive oil over medium-high heat until golden and just cooked through.

In a large bowl mix ricotta, lemon zest, garlic, olive oil, black pepper, and a pinch of salt.

Whisk in 2–4 tbsp hot pasta water until smooth, creamy, and slightly loose.

Add hot pasta directly into ricotta mixture.
