Preparation: Make sure you have all ingredients ready before you start cooking.

Heat oil in a wide pan over medium-high heat.

Fry tofu until golden and crisp on multiple sides.

Remove tofu from pan and set aside.

Mix soy sauce, maple syrup, mirin, sesame oil, ginger, garlic, and optional chili.

Stir-fry vegetables quickly over high heat until just tender.

Add cooked noodles to the pan, return tofu, pour glaze over everything, and toss over high heat until glossy and slightly sticky.
