400 g mushrooms
4 dl coconut milk
400 pcs white beans
2 pcs fresh spinach
1 pcs onion
3 pcs garlic cloves
1 tbsp grated fresh ginger
1 1/2 tbsp red curry paste
1 tsp soy sauce
1 tsp brown sugar
1/2 pcs lime juice
1 tbsp neutral oil
to serve
cooked jasmine rice
fresh cilantro
chili flakes or sliced red chili

Preparation: Make sure you have all ingredients ready before you start cooking.

Heat oil in a wide pot over medium heat.

Sauté onion until soft.

Add garlic and ginger; cook briefly.

Stir in red curry paste and cook for 1-2 minutes until fragrant.

Add mushrooms with a pinch of salt.

Cook until they release moisture and begin to brown slightly.

Pour in coconut milk.

Add soy sauce and sugar.

Add white beans.

Simmer gently for 10-15 minutes until slightly thickened.

Stir in spinach until wilted.
