A Southeast Asian–inspired coconut curry with mushrooms, spinach, and creamy white beans. Rich, aromatic, and protein-balanced — perfect with rice.

4 dl coconut milk

400 pcs white beans

2 pcs fresh spinach

1 pcs onion

3 pcs garlic cloves

1 tbsp grated fresh ginger

1 1/2 tbsp red curry paste

1 tsp soy sauce

1 tsp brown sugar

1/2 pcs lime juice

1 tbsp neutral oil

to serve

cooked jasmine rice

fresh cilantro

chili flakes or sliced red chili

Preparation: Make sure you have all ingredients ready before you start cooking.

Heat oil in a wide pot over medium heat.
