Heat oil in a heavy pot over medium heat.

Bring to a boil, then reduce to a gentle simmer.

Cook uncovered for about 25–30 minutes until tender.

Pour in vinegar.

Simmer gently for 10 minutes to mellow acidity.

Remove lid if needed and simmer until sauce reduces and becomes slightly glossy.
