A comforting Colombian-style arroz con pollo made with shredded chicken, vegetables cooked in the chicken broth, and richly seasoned rice.

Preparation: Make sure you have all ingredients ready before you start cooking.

Place chicken in a pot with scallions, garlic, bay leaf, salt, and water.
